The beauty in great cooking is in the purity of ingredients. The essence of our pasta is three simple elements.

From the Barton Springs Milled flour, and organically raised eggs, to Arbequina Olive Oil, our pasta is built from the best ingredients across texas.

 

Technique

 

Pasta: A true blank canvas. Our pastas are hand mixed and minimally processed to achieve a balance that is delicate yet structured. Our pastas embody true craft and artisanship.

Our rolled and extruded pastas are kneaded by hand and pressed through bronze die to create a textured pasta that will grip its blanket of sauce.

The pastas from our Stuffed and Folded collection are stuffed with seasonal fillings and hand folded to form a single, perfect bite. From winter squash tortellini in autumn to fava bean and truffle ravioli in the spring, our collections evolve as the seasons pass.
